Wyatt’s Room and Why We Won’t Be Having a Girl Nursery!

Good morning guys! I hope this post reaches you at a happy moment of your day. With Rosie’s due date quickly approaching I can’t help but freak out a bit over the fact that (in true Stephanie fashion)  I literally have NOTHING done.  Also, we are headed out for a 3 week adventure here soon that will have us back fresh before 33 weeks, leaving me little time to get everything set up! The reason behind the trip is quite hilarious and slightly embarrassing, and you better believe i’ll blog our way through it so stay tuned.






Anyways, we live in a tiny little home just two bed one bath, and I love it. Before this house we lived in a 700 sq. foot cabin, so tiny spaces are our jam. There is something so special about being in close quarters with your loved ones, I am about to order this to go above our fireplace! I plan to take it to each of our future homes to remind us of this simple, sweet life we lived at the time.

 With that being said, I gave up on the idea that our little girl wold have her own nursery long ago and decided to make her a little corner in our room which I will show you eventually. I thought for some time I could transform half of Wyatt’s room and “girlify” the area but that just seemed ridiculously unnecessary considering she doesn’t even move the first six months of her life and will be snuggled between us at night. So instead of transforming an empty room into a nursery, I decided to work on Wyatt’s room to make that the most kid friendly, fun area that they both will be able to enjoy.

2017 Egg Roll Winner & Easter Recap

Any weekend that surrounds the goodness of Christ, the importance of recognizing our blessings, and family is bound to be a good one. Easter weekend was one for the books, and with two full days of celebration I sit here Monday morning with my heart and belly full of food and happiness.


Saturday we spent with Gavin’s family for a little Easter Egg hunt and BBQ with extended family. This was the first year Wyatt actually understood the concept of finding eggs and placing them in the basket… still no idea that the eggs were full of goodies. After his bag was full, he would dump it over and start new again. It was a great opportuntiy to take his eggs and give them to the older kids because he didn’t know any different! Wyatt is the youngest boy of all his cousins (all a year apart 1,2,3,4 years old)  so anytime spent at the Burkards is full of squirt guns, tractors, trucks, occasional wrestling matches or unwarranted take down in the grass. The youngest is a little girl, Lila, precious as ever who will soon have a best friend to run away from all the boys with.





IMG_7373Sunday we woke up to our new tradition of Monkey Bread, coffee and reading the story of Jesus’ resurrection in a children’s bible story book to Wyatt.  We got dressed, loaded Tank into the truck, and headed to meet my family for Church. It was so special, I love going to church when my family is there because we literally take up the entire row! Wyatt played with his new toy Bronco as we sat there in celebration, so grateful for everything that Easter stands for.


As always, my mom hosted a big family gathering at her house where the 26 year old tradition of the “Egg Roll” commenced. The entire family, ages 1 to 81 put in their names and the bracket was created. I was out the first round of course, but Wyatt and Gavin made it to the quarter finals and lost to my grandpa  who is 79 years old. I was happy to see them lose to my adorable grandpa because he loved it!







We sat around, cheered and laughed as my Mom was crowned the 2017 Egg Roll Champion. A random trophy was used for the epic group shot you’ll see below. Exhausted, happy and full we packed up our things and headed on home.




IMG_7143There is nothing quite like family, and boy did we luck out with two amazing ones. Gavin and I constantly talk about how lovely it is that our families truly did join together when we got married. We are one big, diverse family.  The love and understanding  everyone has for one another is more than I could have dreamed of and I know it is because we all share the same love for Jesus Christ.. and good BBQ 🙂

Easy Fresh Strawberry Pie

Happy Monday everyone, hope this post reaches you at a pleasant moment of your day! In case you haven’t heard the news, Easter is coming up and to be honest it is by far one of my favorite holidays.

Normally, I get the chips and salsa assignment which is code word for “lets give you something you can’t fail at since you are the least capable sister in law to cook something good” . (Just kidding, Shoutout to my kick ass mother in law who always gives me the easy assignments, I love her for that and she knows it) On the real, I really do love my mother in law, not like a “fake” love her so much because she’s my husbands mom and I have to, Maile is the best I would chose her as a friend. Back to the story.

This year I must be on my A game because I was assigned desserts. Naturally I took to the world wide web in search of something delicious, quick and simple that wouldn’t end in me bringing something store bought.  Strawberry Pie caught my eye and I never looked back!  This year, I decided I was going to practice beforehand and test it out while Wyatt napped! I finished this beautiful looking pie while Wyatt was sleeping (meaning it was quick, easy and well…. Gavin gets of at 5 and will be sure to tell me if its good or bad!

I picked up a full flat of Strawberries from The Berry Stop, used half the flat and got the remainder of the ingredients in my pantry or at the grocery store!


  • 1 unbaked pastry shell (9 inches)
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 package (3 ounces) strawberry gelatin
  • 4 cups sliced fresh strawberries
  • Fresh mint, optional


Line unpricked pastry shell with a double thickness of heavy-duty foil. I decided to braid the edges of the pie with the other pre packaged pie dough that was given to me in the box. I used this Youtube video to teach myself how, first timer here! Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.

In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved. Refrigerate for 15-20 minutes or until slightly cooled ( but not too cool because you want to be able to pour it all over the strawberries)



Meanwhile, cut and wash the strawberries. I chose to cut the ones that were going on the bottom layer into fourths and then cut just the tops off the few that would be put on the top. Arrange strawberries in the crust however you would like!



Pour gelatin mixture over berries. Refrigerate until set. Garnish with mint if desired!

Exploring Kauai!

Good morning! Hope this post reaches you at a happy time in your day! As many of you know, we embarked on our trip to Kauai and frankly,  I wish I was writing this post with some coffee on the amazing balcony we spent so much of our time on! Life can get so crazy, Gavin has seriously worked his butt off the past 8 months with a new job that has us all working like a team to support one another, so to have some time off to just relax and enjoy life was such a blessing. Can I get an Amen for all those awesome hardworking men in our lives?! Sometimes as a culture we get way to caught up in working and making money and “the grind” we often forget why we are even doing it. Vacation had a nice way of reminding us why we work so hard, to enjoy life with our loved ones, and we did just that!  From the travel, to our activities, to our very simple schedule I feel like we hit the jackpot.

We flew out of LAX at 9am and with an overstuffed carry-on I was certain we had it all covered, we could have landed on an island and have had enough to survive for a minute, or so I thought. I made a big mistake of packing tons of yummy junk food, practically nothing substantial and we paid for it. The highs of the Cheese-its and Chex Mix lasted a short while then left us feeling depleted and in need of a meal after a 6 hour flight. Won’t be making that mistake again. Aside from the shortage of nutrient rich food Wyatt did pretty dang good. Six hour flights are daunting with a boy his age but he brought his A game, along with a crying minute or two which I have come to accept is bound to happen. An iPad, tons of tractors and books had us constantly playing, then napping hard until we landed and sighed a deep sigh of relief…we actually made it!


Many of you asked where we stayed, my over generous grandparents own a vacation home there that we have been blessed to stay at since I was a tiny girl, so we stayed for free for 8 days. Their house is along a cliff overlooking the Lihue Marriot, so we are able to get guest passes for the hotel and use all their amenities! Kiddie pool, beach towels and a large amazing resort was perfect for our family. Being a young married couple with one baby and another on the way we are always conscious of our spending and taking away the cost of a house enabled us to do so much more on the island than we normally would have!

First thing we did we hop in the car and head to Costco, where we stocked up on lots of good food, fish and lunch food. The BEST part about going somewhere is being able to stay with a kitchen to make your own food so you best bet Gavin was out BBQing something delicious every night for us! We ate lots of peanut butter sandwiches and packed healthy goodies which was such a key in being able to travel and explore the island without spending a ton of mula!



Aside from the hours of relaxing chatting about our passions and blessings, our adventures were the best part of our trip. We wanted to show Wyatt the Island because the last time I was here I was 32 weeks pregnant and the only adventure I did was a casual down to the pool and back up each day! Here are just a few highlights of the things we did as a family:

Paddle Boarding We paddle boarded with little man on the front at Kalapaki Beach and rented two boards $25 and hour and the Kalapaki Beach Boys Rental. This bay was a wonderful place to Paddle Board because it was calm enough to feel extra stable with Wyatt on the Front in his blue Camo Puddle Jumper Life Vest!


Hanakapi’ai Trail:  We knew we wanted to get some exercise in each day so we decided to head to Hanalei and tackle a beautiful 4 mile hike along the Na Pali Coast. (Directions here)  It wasn’t easy, challenging in fact. Gavin had Wyatt on his shoulders the entire time while my pregnant self followed behind for a good two-mile hike into a beautiful beach. We have done this hike each year we’ve visited, but when you add in a 1 1/2 year old and a 21 week pregnant belly, our steps were much slower and water breaks came often. We ended the hike at this stunning beach where we munched our peanut butter jelly sandwiches and played in the fresh river before putting on our shoes and heading back to the car. We ended with THE best nachos on the Island at Kalypso, a nice treat after a long day on the mountain!





Hanalei Bay Kayaking:  We took the kayak and paddle boarded the Hanalei River with rentals from Dock Dynasty which is located right off the road with easy parking and good prices! When we got on the river we decided it was best to begin downstream to the beach, with little consideration that we would soon be headed upstream after our time at Hanalei Bay. We got the beach, and Wyatt was able to swim around with Gavin. Hanalei Bay is the perfect spot for little kids because the water is super clear and shallow, with minimal waves. We splashed around then embarked back upstream for the worst experience of the trip! I had Wyatt aggressively trying to get comfortable on my chest to sleep while kayaking upstream with heavy winds. Gavin had to paddle board his up so he watched and said at one point he saw me paddling hard and moving nowhere for at least 30 seconds. Not going to lie it was miserable but once we arrived at the car and treated ourselves to Wishing Well Shave Ice, we were happy we did it.


We are always reminding ourselves that doing things and showing our kids this amazing earth is vital to their growth as little humans. We have tons of chats about how we will always make an effort to show them different people and cultures and Hawaiians are by far some of our favorite people. Their kind demeanor, gentle spirits and traditions are something I want Wyatt to know and admire just as we do.

A Baby Girl!

A Baby Girl!

Yup! Our little GIRL should be here before we know it!  Time sure has flown by with baby two in fact as I type this,  I’m approaching week 18! Pregnant with number two is much much different, instead of sitting in bed with a bag of popcorn and a Snickers,I’m chasing Wyatt around and making sure to soak up these last few months I’ll have just the two of us all day.  This may come across wrong, but I’ve actually shed a tear thinking how little time left I have with just him and it really makes me want to take full advantage of it since it will never be the same. My family jokes that we forget I’m even pregnant because we don’t have much time to sit around and chat about how many weeks I am when we have babies crawling and playing everywhere! I have to say how much I love the way it is though, our little girl is going to be thrown into the craziness of family and lots of cousins and I know she will love it.

We found out the gender about a month ago, through a new blood test they do on the mother (baby isn’t harmed) called the Panorama test! My cousin Molly told me  you can take it as early as 9 weeks, so we waited till 12 weeks to take it then sat anxiously waiting the results! Gavin and I were so eager to find out, and thankfully we didn’t wait long because they arrived later that week. I had an inkling feeling due to how sick I was, we were having a girl and when I opened the results, I was ecstatic and super emotional. I remember texting my mom saying “I hope my little girl loves me as much as I love you!” I love my mom so dang much I couldn’t believe God decided to bless me with the opportunity to raise a little girl and have a built in best friend forever.

Gavin was super happy too,  but along with the look of happiness I could see sheer terror as so much went through his mind as a new dad of a little girl. A dads role is so incredibly important in a girl’s life, and I know he won’t take his role lightly. He and Wyatt are going to be extremely protective. in fact I already feel bad for any guy that ever looks her way. We have had so many funny conversations about all that he has coming his way, he knows he is going to be at the beck and call of our little girl and there will be nothing he can do about it. I can’t wait to watch him melt at the sight of his little princess. Her day of birth will be game over for him, I told him he might as well accept defeat now 🙂

Wyatt doesn’t really understand any of it, for all he sees, mama has been getting chubbier by the day and keeps pointing to her growing belly trying to get him to say sister. I think ill wait until I’m farther along to try to get him to understand. I have been saying her name quite a bit so hopefully when this tiny little potato shows up he will be able to at least call her by name! Yes, we have picked a name and because I love having you all along this fun journey with us I want let you in on the fun and share the name we have chosen, Rosie Jane!

Rosie is the name of Gavin’s Aunt that I just adore, and Jane is my grandmother’s middle name! Together, her full name brings together both sides of our family and it feels just right!

Celebrating The Good In This World at Disneyland!

Celebrating The Good In This World at Disneyland!

There is something very magical about spending a day in a place full of happy people. I laughed as we walked out of the park thinking every person in this world needs a trip to Disneyland to be reminded of what life is about. People of all different ages, races, religions, languages, abilities and stories all together pursuing happiness was the most refreshing aspect of the day. That and it was Wyatt’s first time at Disneyland!



As I watched his little Mickey Mouse hat being embroidered by the machine, I talked with Gavin about how the memory of this trip will be one we will never forget, and will cherish forever!  Let me tell you, Disneyland through his eyes is far more magical than we could have ever imagined. His little eyes lit up when Mickey came out of the doors, probably thanks to a couple too many hours of watching Mickey Mouse Clubhouse so I could get something done around the house. In fact he is watching it as I type this now haha! What i loved most was that he was initially shy when meeting Mickey, grabbing his shoe and holding up the line but instead of rushing us, the staff gave Wyatt the time to warm up and made his little meet and greet so full of happiness.



We were at Disneyland for two days about five hours each day, the reason being we were there for Gavin’s work trip so we waited until he got off each day and then headed into the park! The first day we met up with Gavin’s parents, his brother Zach and his goofy friends CJ and Jace. They were so sweet to do all the kid rides with us and watching them with Wyatt was so special because I knew that it takes some very kind and genuine humans at 18 years old to choose to hang with the baby instead of going off on their own. A highlight of that day was It’s A Small World, watching Wyatt in between his grandparents with a giant bag of Carmel Corn chowing down so happy and safe in good company and good food.



The second day was just the three of us (four, technically  :), and although we missed the family we really enjoy doing things as a little family.  Gavin took Wyatt and I on all the rides again, and watching the two of them was the greatest. Their mannerisms are so freakishly similar that it’s almost trippy! I am so grateful Gavin is such an amazing Dad to Wyatt, multiple times I turned to see this giant, strong, handsome man turn into this little kid laughing and being super goofy with Wyatt who was obviously eating it all up. We ate too much junk food, and talked about everything under the sun.. then indulged in a massive meal at The Cheesecake Factory before heading home.



Different trips bring out different feelings and although they are all generally very positive, this trip took the cake as far as reminding us of all the good and wonderful people this world has to offer. The smiles, the happiness and the magical moments are ones we surely won’t forget.
